Food

Speaking about the Cuisine of the peoples of Central Asia it should be noted that most of the national dishes of Central Asian cuisine has a high caloric content, delicate aroma and taste, great looks, which also promotes proper absorption of food by the human body. Central Asian recipes are based on the use of various savory sauces. For a person who spent his childhood in Central Asia, the incredibly diverse local cuisine will always remain one of the most vivid memories of his life. Even the names of Central Asian dishes, like lines from Eastern fairy tales: Manty, samsa, shish kebab, mash-kichiri., - and of course, the king of the Eastern table is a real Uzbek Pilaf. Traditionally, the family gathered at a large low table in the middle of which was placed a huge dish with pilaf, which they ate directly with their hands, taking hot and fragrant rice grains with small pieces of meat from the dish and washing down each portion with a sip of green tea.asonings. In the cuisine of Central Asia, the duties of women and men are divided. The famous Uzbek pilaf-rice with meat, onions and carrots – does not tolerate women's hands. It's not that this dictates the preparation of samsa or pilaf, but rather the customs that share traditional cooking duties. In addition, few fans who are trying to get closer to the Central Asian culinary ideal know that the very process of eating requires special rituals, otherwise the pilaf will be wrong, and the tortilla will be stale. So, in Kazakhstan and Kyrgyzstan, one of the most ancient and favorite dishes is beshbarmak – lamb cooked in broth and pieces of rolled dough. "Beshbarmak" translates as "five fingers", because it is customary to eat this dish with your hands. On public holidays, the beshbarmak is served on a separate dish with a lamb's head, and the right to carve it is given to the most honored guest. And here it is important not to make a mistake: for example, lamb ears should be served to young men, and the sky-to girls, after which small pieces of meat are cut off and distributed to the rest of the guests.
